Next to bagels and bialys, they were my go-to bread-y delights. I've never tried to make them myself, but now, thanks to your most excellent post about how to make them, I'm going to give it a go.<br /><br />Beautiful kaisers aside, this post has my heart strings pulled.<br /><br />I truly love and am so thankful for places like Port Austin - real, authentic, genuine, unpretentious little towns and villages. Beautiful in their own special and wonderful way. <br /><br />Even though I've never been a big fan of extreme cold or bone-chilling wintery conditions, a place like Port Austin appeals to something deep within me. It sounds heavenly, in fact, and I can most definitely see (via those beautiful photos you shared with us) and understand why you have an affinity and love for it.<br /><br />Sadly, there are fewer and fewer places that have this kind of warmth (even in the depths of winter) any more. Even here in Ireland. Which makes places like Port Austin all the more special, all the more precious, and all the more important to try and keep it just the way it is.<br /><br />Oh...The Stock Pot cafe sounds heavenly, too. I love little mom-and-pop shops and cafes and diners like that. My dad owned a mom-and-pop candy store back in the 60's and early 70's, so I've a real affection and affinity for places like this.<br /><br />Thanks so very much for sharing your new year's celebrations with us, Jane. Your words, your descriptions, and the beautiful photos just have me smiling on the outside, and very much warmer on the inside, even with the very, very chilly Irish winter we're experiencing now.<br /><br />I can definitely understand how this was the best new year's eve. As for the shaping techniques, I was saying that the traditional "folding" technique is considered the difficult one, not--as you discovered--the alternative knotting technique, which I agree is a simple one to master. I did roll mine in balls and was waiting for them to proof before I slashed then with the knife but upon googling the authentic technique it turns out it's not that hard at all. I rerolled all my buns. <br /><br />Just roll dough into a long tube then make a knot and one end tucks under and one over the top and the tip goes into the centre. <br /><br />Youtube had some videos demonstrating.
