You might want to start with a book l...Hi Avanika, <br />You might want to start with a book like Bakewise, by Shirley Corriher. It's a cookbook, but it explains in very understandable detail the basic science behind many principles of baking. It answers a lot of questions that home bakers naturally have about how, and why, things work the way they do. It's not what I'd call a beautiful book (not lots of pretty photos etc.) but I think you might find it really interesting and useful. You're right, Avanika, in that there are lots of books to choose from, many of them used as culinary school textbooks, that discuss the scientific aspects of baking.
